c'est avec grand plaisir que je vous presente aujourd'hui le premier ouvrage de l'ECOLE LENÔTRE, mais laissez-moi, tout d'abord, vous raconter l'école qui est, depuis ses débuts, ma deuxième famille. La transmission du savoir-faire est ma passion de toujours et ma raison d'être. Il y a vingt-cinq ans, avec un grand professionnel, Gilbert Ponée, nous avons créé l'ECOLE DE PERFECTIONNEMENT GASTON LENÔTRE. Cette école, que nous avions tellement souhaitée avec toute l'équipe des professeurs, est devenue en France et dans le monde entier, le modèle, le must en matière de formation « haut de gamme ». Depuis son ouverture, des milliers de stagiaires français et étrangers l'ont fréquentée. On y apprend tout, avec ses mains, avec ses yeux et avec sa tête, du respect des matières premières aux règles strictes de l'hygiène. Je ne connais pas d'école privée au monde qui ait une telle qualité de professeurs — dont certains sont Meilleurs Ouvriers de France. Nous désirions depuis longtemps mettre par écrit ces connaissances et compétences. C'est chose faite avec ce premier ouvrage, résultat d'un travail collectif qui illustre bien l'esprit de corps de l'ECOLE LENÔTRE. Je souhaite longue vie à notre ECOLE LENOTRE et me réjouis des prochaines publications prévues.
 I take great delight in presenting this first published work by the ECOLE LENÔTRE. However, let me start by telling you the story behind the school which, since its very beginnings, has been my second family. The transmission of knowledge has long been my passion and the driving force in my life. Twenty-five years ago, in association with one of the great names in our profession, Gilbert Ponée, I created the ECOLE DE PERFECTIONNEMENT GASTON LENÔTRE (Gaston Lenôtre School of Proficiency). In France and across the world, the school which we and the team of teachers had so wanted to see established has now become a model, a must, in the field of "up-market" training. Since its opening, thousands of French and foreign students have attended the school. One learn everything there is to know, using hands, eyes and head, from the respect of basic materials to the strict rules of hygiene. To my kowledge, there is no other private school in the world which can boast such high quality teachers — some of them "Best French Crafstmen". For a long time now, we have wanted to record our knowledge and skills in writing. The first step has finally been made through this initial work, the result of a collective project which perfectly illustrates the team spirit which reigns at the ECOLE LENÔTRE. I wish long life to our ECOLE LENÔTRE and look forward eagerly to ists future publications.
